Jason takes an unlikely duo and makes a warm winter meal!
1 lb. of Ground Venison
8oz of shredded cheddar cheese
Half of an onion, chopped
15.5oz of black beans
Salt & Pepper
Whole wheat tortilla
2 Tbsp. of EVOO (Extra Virgin Olive Oil)
Preheat your skillet with some extra virgin olive oil. Once the oil is hot, add your chopped onions and sauté them until cooked. Add in your ground venison (or meat of any kind.) Using a spatula, mix the ground meat until cooked.
Add chili powder, salt and pepper to meat, then mix in well.
Add black beans and salsa to meat and mix well. Turn your heat down and cover. Uncover 2-4 minutes at a time to mix well, until beans are cooked.
Lay out your tortillas, layer cheese on half of the tortilla, then take about 4-6oz of your meat mix and lay across the cheese. Layer more cheese on top of the meat and then fold the tortilla in half.
Place your folded tortilla with cheese and meat mix on a griddle or press, brushed with olive oil on each side and cook until the cheese melts. Flip it, to be sure to heat both sides.
After the cheese is melted and your tortilla marked with brown grill lines, plate your quesadilla and cut into desired pieces to enjoy with your family.
